The Angler's Logbook x JM Knives
Our first knife specifically designed for a hassle-free filleting experience.
The thin blade has been shaped for easy slicing through the flesh of the fish, while the slight flexion in the blade allows the user to closely follow the spine of the fish to minimise wastage.
The blade is made from recycled, vintage leaf springs and has been forged in a coal furnace, resulting in a distinctive aesthetic which blends ruggedness and refinement. The knife blade will patina over time, telling the story of every use of this hand-crafted knife. Alternatively, a quick rub of steel wool over the blade is all that is required to maintain the original appearance of the blade if desired.
The brass bolster seals the end of the apricot timber handle for improved durability. The handle is shaped with a flat upper face to apply maximum downward pressure while preparing the fillet. The butt is shaped to discourage the hand from slipping off the rear of the knife, while an integral guard mitigates forward slippage.
Included with The Angler's Knife is a handmade timber sheath to protect the knife between use.
Each knife is crafted individually by hand, so there will be minor differences between each one, though the inherent qualities are consistent across each knife.
